The poet admirably tells us that the Pastors, at the time of departure from their mountains, drink long and greedily at the known and friendly springs, as if the memory of the taste of those sweet waters can be imprinted better in the mind and in the heart already swollen from nostalgia. The choice of the name is therefore a deliberate emphasis on the absolute genuineness and typicality of preparation of this inimitable Pecorino Amatriciano that, despite being slightly spicy with a mature taste and aroma, is surprising because it is able to preserve an extraordinarily attractive freshness.
