“Ubriacacio” is a seasoned pecorino produced with late lactation milk which during the harvest period is wrapped in the pomace of Cesanese grapes, the only native vines of Lazio, which gives this cheese character and bond with the territory. Medium-aged cheese with a compact texture but that melts in the mouth, with a sweet taste with a slight hint of wine that is perceived from the crust to the heart. Pecorino with a spicy and persistent flavor, with an intense wine aroma, the surface of which is completely covered with purplish marc, inside it has streaks of the same color that stand out on the whiteness of the pasta. The pomace in which this sublime flavored pecorino is wrapped are carefully selected by an expert oenologist together with our cheesemaker. This particular refinement gives this product an unmistakable scent and flavor, determining its strong character.
