Pecorino "Tabacacio", a "meditation" cheese par excellence, an expression of quality and imagination, arises from the need to bring this sensorial combination to the dairy sector, to capture the attention of lovers of these particular aromas and flavors. Obtained from sheep's milk collected and processed within the day, to preserve all the organoleptic properties and thus give rise to a product of undisputed quality. When ripe, it is refined with rum and wrapped in Kentucky tobacco leaves, the only variety used for the production of the well-known Tuscan cigar. The drying of these leaves takes place through the smoke of particular woods, giving them a characteristic aroma and the classic dark color. Roundish shape with straight sides, it has a dark brown crust inside which a rather compact, straw yellow colored paste opens up. It stands out for its intense, bursting taste and persistent aroma given by the tobacco that surrounds it and the rum contained within it.
