Moderately seasoned Pecorino Amatriciano. Our cheesemakers make it still inspired by the cheese that the shepherds produced and consumed during the Transhumance and sold or exchanged during the journey or upon their arrival in the wintering areas. The quality of the cheese allowed them to obtain bread, pasta, wine and also meat, fish and vegetables in exchange. Excellent dish cheese, it is easily recognized for the characteristic peel that recalls the typical wicker canestrelli used in ancient times. Really refined aroma and taste, to be combined at will.
