The stazzo (from the Latin statio, station, abode, stopping point), was the shelter where the shepherd stayed, ate and sheltered during bad weather.
Some of these, located on the Amatriciana slope of the Monti della Laga, a vertical horizon striking for their position.
If those brave men led their flocks up there and exposed themselves to enormous risks, they evidently had a good reason, which could only be the abundance and the quality of the pasture, and therefore the exquisiteness of the milk obtained from it. Of those sacrifices, of the secular ones, the knowledge passed down, we have treasured and we defend the secrets carefully.
One of these concerns an ancient recipe that recommends, among other things, the use of flakes of truffle in the preparation of the cheese. The ancient shepherds were in effect able seekers of berries, roots and mushrooms with which they could integrate and flavor their poor diet. Some of them, during the ascent to the highest pastures, had the chance to find some truffles, knowing their "position". The soft caciottine of Pecorino with a fresh velvety taste, enhanced by the inebriating aroma black truffle rose, together with a good, young and vigorating red wine, a real "Conforto" for the morality (and stomach) of the shepherd who came back tired to his refuge, to spend the night.
