Delicious even when fresh, this caciotta is made with freshly milked goat's milk, which gives it a light, elegant spiciness and a very strong personality. The name is dedicated to it in homage to those harsh and solitary places, the "Romite", where some daring shepherds came to lead their goats always in search of the best herbs and pastures.
