Soft cheese with an unmistakable aroma and flavor, a real tasting journey in which to immerse yourself with a harmony that makes flavors harmonious thanks to the tacit association between sweet and savory. A contrasting game of textures and flavors that of cheese with a strong taste and the delicacy and sweetness of forest honeydew. Pecorino of compact consistency derived from the processing of sheep's milk is externally presented with a crust characterized by the coating of flowers, which give this product an enveloping scent inside which there are drops of honey for a perfect harmony of flavors aimed at enhancing the sensations of the palate without one being more intrusive than the other. The making of this aged cheese takes place thanks to the help of wooden vats containing liquid forest honeydew in which the product is immersed for about 7 months. This long and particular seasoning favors a peeling of the dough that allows the penetration by osmosis by the honey that is found inside and can be seen during the cutting of the product. After this phase of immersion in the forest honeydew, the cheese is covered with sifted chamomile flowers, Roman chamomile, elderflower, blue cornflower, safflower flowers and sunflower petals which give the cheese a natural fragrance. The perfect combination of the buttery of the cheese combined with the honeydew and the fragrance of the flowers give this unique product a particular hint of undergrowth.
