The choice of this name proudly underlines the fact that only the cheeses that bear the L'AMATRICIANO trademark on the label can truly be considered "di Amatrice" being the "Storico", the only dairy operating in the Municipality of Amatrice. All the skill of the company's cheesemakers is beautifully expressed in producing this exquisite pecorino. The recipe is always scrupulously followed in every component. This rigor, together with a very light and careful aging, gives “Unico” a sweet aroma and a very refined taste, repaying us for every effort.
