Exquisite seasoned Pecorino, it is one of the cornerstones of the production and tradition of the L'AMATRICIANO. Acclaimed for the delicacy of the scent, it combines its wonderfully sweet flavor with a very slight spiciness. Its name is a real dedication to the hard life of the ancient transhumant shepherds and their constant wandering through mountains, valleys and woods, often inaccessible places that only they and, indeed, the "brigands", practiced. For this reason, agreements, exchanges, or even friendship and solidarity frequently arose between the shepherd and the brigand, to the point that, at times, the border between the two figures became evanescent. In this regard, it is said that these caciotte were adorned with a rudimentary bow, in order to be then brought as a gift to these friends that the shepherds knew they would meet during the stages of the long journey.
